Ingredients
- 1 can full-fat coconut milk (choose a brand with no additives, and one that comes in a BPA-free can)
- 6 large, pitted Medjool dates
- 1 Tbsp alcohol-free vanilla
- 1 tsp cinnamon
- 1/2 tsp sea salt
- 3/4 cup chia seeds (white or black)
- coconut chips (optional)
- pumpkin seeds (optional)
- hemp hearts (optional)
Procedure:
- Add coconut milk, pitted dates, vanilla, cinnamon, and sea salt to a high-powered blender.
- blend on high until smooth
- add chia seeds to blender
- pulse until combined
- pour pudding mixture into serving bowl, cover and place in the refrigerator for 30 minutes to an hour to allow the pudding to set.
- (optional) top pudding with coconut chips, pumpkin seeds, or hemp hearts
