Chia Seed Pudding


An easy, enjoyable recipe that's great for breakfast or dessert. Chia seeds are a great source of Alpha Linolenic Acid!

Ingredients

  • 1 can full-fat coconut milk (choose a brand with no additives, and one that comes in a BPA-free can)
  • 6 large, pitted Medjool dates
  • 1 Tbsp alcohol-free vanilla
  • 1 tsp cinnamon
  • 1/2 tsp sea salt
  • 3/4 cup chia seeds (white or black)
  • coconut chips (optional)
  • pumpkin seeds (optional)
  • hemp hearts (optional)

Procedure:

  1. Add coconut milk, pitted dates, vanilla, cinnamon, and sea salt to a high-powered blender.
  2. blend on high until smooth
  3. add chia seeds to blender
  4. pulse until combined
  5. pour pudding mixture into serving bowl, cover and place in the refrigerator for 30 minutes to an hour to allow the pudding to set.
  6. (optional) top pudding with coconut chips, pumpkin seeds, or hemp hearts
